Ingredients & Preparation –
To make this flavorful Cauliflower Bhurji, you’ll need a few simple yet aromatic ingredients. The star of the dish is cauliflower, finely grated or chopped to achieve a light, fluffy texture. It is paired with onions and tomatoes, which adds both sweetness and tanginess. A touch of green chilies, garlic, and ginger enhances the overall flavor, giving it a deliciously spiced kick.
To bring out the best in this bhurji, a blend of spices is used. That includes turmeric for color, red chili powder for heat, coriander powder for earthy notes, and garam masala for depth of flavor. A tempering of cumin seeds in oil or ghee provides a warm and aromatic base. Finally, a sprinkle of fresh coriander leaves adds a burst of freshness, completing the dish.
How to Make Cauliflower Bhurji –
The process starts with preparing the cauliflower. Wash it thoroughly, dry it, and then either grate it or pulse it in a food processor until it resembles fine rice grains.
Next, heat oil or ghee in a pan and add cumin seeds, letting them crackle. Sauté garlic, ginger, and green chilies until fragrant. Then, add onions and cook them until they turn light golden brown.
Sprinkle in a mix of spices and blend them well with the cooked ingredients. Add the grated cauliflower and green peas, stirring to coat them with the flavors. Cover and cook for a few minutes until the cauliflower turns tender but not mushy, maintaining a balanced texture.
To finish, mix in chopped tomatoes and a dash of garam masala for extra warmth and depth. Finally, garnish with kasoori methi and freshly chopped coriander leaves.
Tips & Variations –
• For extra crunch, add some finely chopped bell peppers or carrots.
• Want a richer taste? Cook the bhurji in ghee instead of oil.
• Make it protein-rich by adding crumbled paneer or tofu.
• For a South Indian twist, temper with mustard seeds and curry leaves.
