Each season brings in ingredients that make us quite able to beat the season’s bad things. Winter is no exception. If there is any food that epitomizes winter, it is always anything that is warm or even hot. And from that list, soup is the priority for most of us. Soups are not just a delicious winter meal, they can also help control weight gain and boost our immune system. The best part is, these are super easy to prepare. There are numerous soups perfect for winter, a few I have already added to the blog like these 👇
As the winter is here and one of my fav winter vegetables is cauliflower, So here I am going to share a soup recipe using this as Roasted Cauliflower Soup flavored with Curry Powder.
Basically, the soup is prepared using some oven-roasted curry powder flavored cauliflower florets.
Curry Powder!
It is a fine blend of some whole spices which is added by Britishers into various dishes to create amazing Indian flavors. So this spice powder is not commonly used in traditional Indian cooking, but rather an invention of the British to evoke the flavors of Indian cuisine.
The right heat is obtained in this spice powder from the red chili powder, whole black peppercorns, and the color, bright yellow is obtained from the turmeric powder. The whole cumin seeds add a smokiness whereas the coriander seeds add subtle flavor.

Preparation of this cauliflower soup –
➤ Roast the cauliflowers –
First, the cauliflower head is cut into evenly sized small florets. Then in a mixing bowl, these are tossed with curry powder, salt, and oil till evenly coated. A baking tray is lined with parchment paper and all the florets are arranged evenly in a layer. In a preheated oven at 200 deg C, these are baked for 20 mins or until golden in color and tender, tossing in between.
➤ Make the soup –
Next in a pan, chopped onion and garlic are sauteed till transparent and fragrant. Then the roasted cauliflowers are added along with the vegetable broth. Everything is allowed to boil over high heat and then simmered for 15 minutes till all the flavors are well incorporated. Heat is then turned off. Either using an immersion blender or in a regular blender, in batches, a puree is prepared. Some freshly squeezed lemon juice is added to the puree and also the salt is adjusted. Finally, after giving a nice stir, the flavorful soup is ready to serve!

What could be the consistency of this soup?
This part completely depends upon the individual choice. We like the soup neither thick nor thin. If you like a little thinner consistency of the soup, then simply add an extra amount of vegetable stock.
Serving suggestion –
This roasted cauliflower soup is the perfect winter warmer! If you have a cauliflower head in your pantry with some homemade curry powder, then you are ready to go. This soup is so rich, flavorful, and creamy without the use of any cream too.
It is perfect to serve warm and top with spring onions/coriander leaves. Just with a side of some crusty bread, this roasted cauliflower soup is ideal as a starter.

Roasted Cauliflower Soup flavored with Curry Powder
a vegan and gluten-free winter soup using some roasted cauliflower florets having a curry powder flavor which is overall so rich and creamy without the use of any cream.
Ingredients
- Cauliflower (small florets) 2 cup
- Onion (chopped) 1 no.
- Garlic clove 8-10 no.
- Vegetable broth 3 cup
- Curry powder 2 tbsp
- Green onion (for garnishing) few
- Lemon juice as needed
- Olive oil 1.5 tbsp
- Salt as needed
Instructions
- Preheat the oven at 200 deg C and line a baking tray with parchment paper.
- In a mixing bowl take all the cauliflower florets and sprinkle curry powder, salt.
- Drizzle 1 tbsp of olive oil and toss everything till all the florets are evenly coated.
- Arrange all the florets over the baking tray evenly in a layer and bake for 20 mins or until golden in color and tender, tossing in between.
- Take out from the oven and keep aside.
- Heat 1/2 tbsp of oil in a pan.
- Add chopped onion and garlic, saute till transparent and fragrant.
- Next, add all the roasted cauliflowers and mix everything.
- Pour the vegetable broth and give a nice stir.
- Allow to boil over high heat and then simmer for 15 minutes till all the flavors are well incorporated.
- Turn off heat and puree with an immersion blender (or in a regular blender, in batches) until smooth.
- Add the freshly squeezed lemon juice, also adjust the salt, and stir well.
- Ladle into the soup bowl, top with few roasted cauliflower small florets, and some chopped green onion!
Notes:
Add the extra amount of vegetable stock if a little thinner soup is desired.
The texture of the soup can be smooth or slightly chunky, blend accordingly.
Add a little more lemon juice for that extra zing in the soup.
Cut the cauliflower into evenly sized small florets to use for this soup and arrange all the florets on the baking tray in a single layer. This ensures even and easy cooking.

Roasted cauliflower along with curry powder must have taken the soup to different level. I used to cook with curry powder a lot when I was living abroad. Love the flavour.
Using roasted vegetables to make soups makes it so much tastier. Lovely creamy texture and am sure the curry powder adds so much flavor to it. With some bread, its a perfect light meal.
